Strawberry Delight

I FINALLY BAKED!!

I baked 2 round, double-layered strawberry cakes, aptly named Strawberry Delight Cake by my Grandmother on Friday night. It is a simple vanilla cake recipe to which I added partially thawed frozen strawberries in light syrup. The frosting was merely butter, confectioners sugar and vanilla. After mixing / whipping the buttercream frosting, I slowly added strawberries so as not to dampen the consistency.

They were gone by Saturday afternoon. I myself had 3 slices. And I NEVER eat what I bake!! (not for the lack of taste, I just bake so much and so often that I seem to have lost my sweet tooth)

I think I will make this for my bff’s 30th next week. Strawberry is her favorite. I usually make her a sickeningly sweet “strawberry cake mix with strawberry canned frosting with Comstock strawberries between the layers” because she always asks for it. She loves it. It wasn’t until early this year that I started to explore my baking abilities therefore I had no idea how to make a cake from scratch much less know whether or not I’d be able to! I hope (*fingers crossed*) she’ll like this one better because it is made from scratch, with love, and will obviously taste better!!
